Traditional Diet

Traditional Hawaiian diets are considered to be some of the healthiest in the world. Living on a protein, vitamin and mineral rich diet that consisted mainly of poi (pounded taro root), fresh fish along with fruits and vegetables such as banana, coconut, breadfruit and sweet potato made for a clean and nourishing foundation. Even Hawaiian sea salt that was harvested in large amounts held minerals and rich health benefits. We aim to teach you about a variety of the beautiful canoe crops that the Polynesians brought to the Hawaiian islands over 1,000 years ago and how they are still being used today. 

Modern Food Practices

Fast forward to modern day Hawaii – you do not see this traditional health based diet by any means. Yes, you can still find fresh poi and poke with a variety of local fish, but much of the vegetable and fruit base has changed to fried food, rice and less healthy starches than taro or breadfruit. Of course, with modern influences come imports of all kinds of foods. We do have a beautiful and intricate cuisine here that has been influenced through the Plantation Era by Chinese, Japanese, Okinawan and Filipino food culture. Through all of these cultural influences, we want to share with you the foods with the best health benefits for your body, mind and spirit.

Balance the Ancient with the Modern

Here at Tasting Kauai we want to honor the healthy traditional foods and practices, while also sharing with you the modern health foods and techniques that locals are using to make new traditions here on our beautiful island. Come with us to a medicinal herb farm, visit a local juice company to try fresh fruits in a new way and to learn about and try for yourself some of the traditional Polynesian foods still being utilized in modern Hawaii. Let us share the education and fresh flavors of Kauai with you on our Food as Medicine Tour! And don’t worry, we still sneak in a few decadent tastings for all of your hard work learning.  We can promise that you will not leave hungry 🙂 Life is after all, about balance. 

Celebrating 80 years of Bloody Marys at the St. Regis Princeville Resort

“I have been working for five months on this project which starts this Sunday,” Franck Desplechin, executive chef of the St. Regis Princeville wrote to me in an email. “Bloody Mary celebrates 80 years. It was created in 1934 in New York and now is a part of the St. Regis brand. There are 31 St. Regises around the world so there will be 31 different Bloody Marys. The St. Regis Monarch Beach decided to do a one night event and we decided to celebrate for one week! I will fly to Honolulu next Tuesday to talk about it on Hawaii News in the morning. Tasting Kauai

Happy Aloha Friday! We had an exceptional week and hope you did too. Last Sunday, our article “How to grapple with star apple” ran in The Garden Island newspaper.  I had star apple a couple of years ago, but didn’t like the latex coating it left in my mouth. Keoki’s Paradise

Keoki’s Paradise has live music every Sunday through Wednesday from 7 to 9 p.m. On Thursday through Saturday the have live music from 5 to 7 p.m. and again from 8 to 10 p.m. They do a big band the first Friday of every month. Revival will play in February; March, Greenstone Project; April, Pono Breez. Keoki’s is hosting an online hula pie contest so make sure you like Keoki’s Paradise on Facebook. They’ll also feature a hula pie flavor of the month to go along with the original mac nut and the mint chocolate chip.

George of the Jungle

The Kauai Culinary Market is a partnership between the Kauai County Farm Bureau and The Shops at Kukuiula. On Wednesday, Feb. 6, they are putting on a special event called Flavors of Kukuiula during the Kauai Culinary Market. At 5 p.m., Laura Cristobal, owner of Salty Wahine Gourmet Hawaiian Sea Salts,will do a cooking demonstration using her Mango Java rub on Kauai-raised, grass-fed beef from the Andrade Cattle Co. Grass-fed beef is lower in fat and requires a different cooking technique. If you’ve been wondering how to cook up a juicy, flavorful steak, stop by and learn how then sample afterwards.

If you like it, and I know you will, you can buy gourmet cuts straight from The Rancher’s Daughter. Sharleen Andrade-Balmores will be there to sell her father’s filet mignon, rib eye steak, top sirloin, tri-tip, N.Y strip, London broil and steer burger. Steer burger is ground from prized steers, and not like hamburger which is usually ground meat scraps. Ask Sharleen how they raise their meat, she’s passionate about it and the paniolo tradition.
