Several weeks ago, I bought a dozen farm fresh eggs at the farmers market. I didn’t open them up at the stand because I’ve grown accustomed to trusting local farmers. I just paid for them and put them in my bag. They were going into a Spanish omelet for dinner, along with some young onions. When I got home, I opened the recycled, grocery store carton, and was alarmed to see bits of dirt, and what I imagined to be poop, clinging to the eggs.

My first thought was, “UGH! There’s got to be salmonella on these shells! When I crack these eggs open, it’s going to get inside!” I carefully laid them in a sink full of water, and scrubbed them clean. Then I scrubbed my hands and the sink. I call these Sunrise Muffins because the lilikoi makes them a deep orange color; the same color that I am blessed to see when the sun rises on Kauai. The muffins are full of chunky pineapple, shredded coconut, bananas, and macadamia nuts, and make a delightful companion to a cup of Kauai Coffee. Continue Reading →

Tortilla Republic in Poipu, Kauai Now Serves Breakfast

Tortilla Republic, located in the Shops at Kukui’ula in Poipu on the south shore of Kauai, announces the addition of daily breakfast service from 7 to 11 a.m., Monday through Saturday. Guests are invited to come in for an “eye opening” cocktail, Mexican breakfast entrée, traditional breakfast dishes or even a customizable flight of bacon!

The breakfast menu features Huevos Divorciados with poached eggs, tomatillo ranchero sauce, bacon, black beans, tortilla strips and queso fresco ($14); Torta de Huevo with a fried egg, brioche bun, applewood smoked bacon, cheddar, arugula, aioli and breakfast potatoes ($12); and Chilaquiles with poached eggs, tomatillo sauce, roasted poblano, queso fresco, sour cream and black beans ($12).
