On Kauai, Jean Marie Josselin is most remembered for his popular restaurant A Pacific Cafe, which flourished in the 90s, and was located in Kapaa. During that time, chefs of Hawaii were cooking with Asian flavors, European techniques, and sourcing from local farmers, ranchers and fishermen, which was unusual. Twelve chefs are credited with creating Hawaiian Regional Cuisine, and Jean Marie is the only one cooking on Kauai.
Tonight at 5 p.m., his Poipu restaurant, Josselin’s Tapas Bar & Grill is featuring “A Visit to Morocco” with Sudeeka Belly Dancers, exotic music, and a four-course dinner for $45.
