Haupia, Hawaiian Coconut Pudding

If you’ve been to a luau, you’ve seen haupia. They’re the glistening white squares at the end of the buffet line. Next to the coconut cake and Kona coffee chocolate macadamia nut pie. Most visitors aren’t sure what to make of the milky-white cubes, but if they’re brave, they pop one into their mouth.

The cool pudding-like texture melts once it hits your tongue. Silky, creamy and tasting of pure coconut, it’s a dreamy treat for those who seek coconut’s sublet flavor.

Haupia (pronounced how pee ah) tastes of pure coconut because it’s made with just four ingredients: freshly grated coconut, cornstarch, sugar and water. Sound simple? Well, authentic haupia is a two day process.

The Hawaii Book of Rice Cookbook Review, Part 1

I first met Cheryl Chee Tsutsumi when she was autographing copies of her new cookbook, “The Hawaiian Book of Rice”. I was strolling through Poipu’s Culinary Market at Kukuiula Shopping Village, my favorite farmers market, when I noticed a crowd.

I love cookbooks, and they seem to fill my shelves without me noticing. Since I grew up in Colorado, I’m especially interested in cookbooks written by residents of Hawaii. As I waited in line, I noticed that proceeds were being donated to the Hawaii Food Bank (bonus), and she was giving out rice paddles to everyone who bought a copy (bonus-bonus!) Continue Reading →

Last Monday, Daniel Shipley wrote a post for us that recalled his experience with the exotic fruit of Kauai. Daniel is back home traveling the far reaches of Canada and blogging about it, but before that, he lived on Kauai for a year. While he was here, he worked in the kitchen at one of our favorite restaurants, Oasis on the Beach.

“It’s rainbows and mai tais!” My girlfriend Carol exclaimed during her visit to Kauai, even though it rained the whole time. Maybe it was the bottle of Dark Koloa Rum that brightened her spirits. Even her husband Bill, who is not a rum fan, was won over by the smooth, almost sweet chocolate-colored rum.

Dan and I tried Koloa Rum for the first time about two years ago. Because I like the rum so much, I did a story on the Koloa Rum Co. last August.

Living on Kauai has made me a kalua pork connoisseur. When done right, the tender meat is infused with smoke and salt. Fat melts into the strands, and adds an unbeatable flavor. As Emeril Lagasse says, “Pork fat rules!”

One of my favorite comfort foods is a bowl of steamed rice with kalua pork, cabbage and poi. The combination is ubiquitous on the islands, and you can find kalua pork  at luaus, grocery stores and restaurants, but most of it is not true kalua pork. Continue Reading →
