Probiotic? Fermented? As a young mom (read that as you want), those two terms were foreign to me. The only “biotic” I was familiar with was an anti-biotic for sick kids and I just assumed “fermented” meant moldy cheese. Shoots, was I wrong! Pau For Now
Sometimes, the weight of running your own business is too much. This is one of those times. I am taking a Hawaii Master Food Preservers course, which is eight days long and covers everything from food safety to making jams and jellies, canning vegetables and meat, dehydration and fermentation. I have 11 classmates: three from Waipa Foundation, Janine from Black Dog Farms, Aletha from Monkeypod Jam, Morris from Hula Baby Biscotti, Keone from Malama Kauai, and three famers, two of which are organic.
Class is from 8 a.m. to 5 p.m. and began last Friday. On Saturday, we learned to safely make jelly and preserve it. Of course, Aletha has this part down. The class will continue for the next two Thursdays, Fridays and Saturdays. As a result, I won’t be able to write Pau Hana Friday until February 28.
I appreciate that you come here to learn about Kauai food news and events. Pau Hana Friday does not generate any income and that’s ok. It’s my gift to you. Unfortunately, when there’s more work than I can handle, the stuff that doesn’t pay my rent goes first. You’ll still see Winesday with The Wine Shop and when I can, I’ll post news and events on the Tasting Kauai Facebook page.

11:30 a.m. to 3:30 p.m., Smith’s Tropical Paradise, $100
The annual Taste of Hawaii at Smith’s Tropical Paradise in Wailua is a fundraiser for Kapaa Rotary Club. This year, they celebrate 25-years with statewide chefs beverage vendors and music. There are 35 food participants, and 40 food booths. Many have more than one dish to offer and five offer dishes for vegetarians, three vegan booths, two breakfast booths, 14 will offer seafood, five will serve up pork, seven chicken dishes, nine sweets, three baked goods that are not sweet, three salads and there will be a couple of gluten-free options. There are five stages with live entertainment eight beverage booths: three water, one juice, one hot coffee, two tea, one lemonade, one soda, six beer booths and four wine booths. We’d like to send you a hearty mahalo for referring to our website whenever you crave a slice of paradise. We appreciate you, and look forward to another year of sharing the best things to eat and do on Kauai. We work hard to give you content that is beautiful as well as useful, and we need a break! This will be our last blog post of 2012. Beginning Dec. 18, we will take a much needed vacation. Join us again on Jan. 4, for our first Pau Hana Friday of 2013. There’s an exciting year ahead, including our expanded Kauai Culinary Tours, wine dinners with celebrity chefs, and pop-up dinners.
