The Westin Princeville and Koloa Rum Co. are teaming up for a cocktail party with live entertainment on the waterfall terrace at Nanea. Watch the sunset over the Pacific Ocean and talk story with Bob Gunter, president of Koloa Rum. He’ll be there, along with PR Director Jeanne Toulon, offering samples of their four award-winning rums. The price also includes Koloa Rum signature cocktails (s!) and I just received the scrumptious details from executive chef Kahau Manzos.
Pork Belly Barbacoa
Kahau says these pork bellies are marinated for three days in a mixture of Koloa Spiced rum, chipotle, fresh lime and garlic. After the delicious dip, the pork bellies are slow roasted for several hours and finished on high heat to crisp the edges. He’s going to serve the bellies on warm tortillas.
Rum Braised Short Ribs
Koloa Dark Rum, fresh ginger and about five hours in the oven will make these short ribs super tender. They’ll be popped into a steamed bao bun with cucumbers, cilantro and a drizzle of spicy aioli.
Mojito Shrimp
Grilled Kauai shrimp, fresh lime, mint, and Koloa Gold rum. How can you go wrong?
Rum Glazed Duck
Kahau scores duck breast and marinates them overnight in a blend of Koloa Dark Rum, Chinese 5-spice blend and a little hoisin. This will be served with local Kailani greens and cucumber namasu. Yum!
Ahi and Rum Ceviche
In the style of Tahitian poke, fresh ahi, veggies, fresh lime juice and Koloa White Rum will be served with Taro chips.
Chocolate Waffles
Tender chocolate waffles filled with Koloa Dark Rum infused crème anglaise, fresh berries and whipped cream. Oh yeah!
Rumbaba!
A traditional French yeast cake soaked in Koloa Spiced Rum.
